Greek Turkey Burgers with Cucumber Salad

Ingredients
  

  • 500 g turkey mince 5% fat works best
  • 1 small red onion half finely grated, half thinly sliced
  • 2 cloves garlic minced
  • 1 large carrot peeled and grated
  • 60 g rolled oats not instant
  • 1 large egg beaten
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 large cucumber diced (about 300g)
  • 200 g cherry tomatoes halved
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 4 wholemeal pitta breads or burger buns to serve

Method
 

  1. Prepare the burger mixture: In a large bowl, combine the turkey mince, grated red onion, minced garlic, grated carrot, rolled oats, beaten egg, dried oregano, cumin, salt, and pepper. Use your hands to mix everything together until it is just combined — you should feel the mixture become slightly sticky and cohesive, but stop before it turns pasty.
  2. Shape the patties: Divide the mixture into 8 equal portions and shape each into a patty about 2cm thick. As you shape them, you'll notice the oats and carrot give the mixture a slightly textured, almost bumpy surface — that is exactly what you want. Place the patties on a plate lined with baking paper.
  3. Make the Cucumber Salad: In your large salad bowl, combine the diced cucumber, halved cherry tomatoes, and the thinly sliced red onion. In a small jar, shake together the red wine vinegar, lemon juice, and 1 tablespoon of the olive oil until it looks cloudy and emulsified. Pour the dressing over the salad and toss gently. You should hear the crunch of the cucumber as you mix.
  4. Cook the burgers: Heat the remaining 1 tablespoon of olive oil in a large non-stick frying pan over a medium-high heat. When the oil shimmers and you can feel the heat rising off the pan, carefully place 4 patties into the pan — you should hear a satisfying sizzle immediately. Cook for 5 minutes without moving them; the edges will turn a deep golden brown and you'll smell the oregano and cumin toasting.
  5. Flip and finish: Flip the patties carefully. The cooked side should be a rich, caramelised brown with little crispy bits around the edges. Cook for another 4-5 minutes, until the internal temperature reaches 74°C and the patties feel firm to the touch. Transfer to a plate and let them rest for 3 minutes — you'll see a little juice pool on the plate, which means they're perfectly moist.
  6. Repeat with remaining patties: Wipe the pan clean with kitchen paper and repeat steps 4 and 5 with the remaining 4 patties. While they cook, lightly toast your pitta breads or buns in a dry pan or toaster until they smell nutty and have golden spots.
  7. Assemble and serve: Place two patties on each toasted bun or pitta, then top generously with the Cucumber Salad. Serve immediately, or cool completely for meal prep.

Notes
